Roast Chicken with Sweet Potato & Green Beans
This is for two servings.
1 Roast Chicken ~3 pounds (any weight that works for you and your family) 4 ounces, 4SP
2 Sweet Potatoes approximately 5 ounces each, 5SP per Potato
1lb Fresh Green Beans, 0SP
1 Garlic Clove, 0SP
1 Tbsp Olive Oil, 4SP
Salt & Pepper, 0SP
Total: 11SP per serving
- Sprinkle Salt and Pepper on the chicken and bake at 350 degrees until temp reaches 165 degrees.
- Baked two sweet potatoes until the center is soft and warm. This can easily be done in the microwave by poking a few holes in the potato and cooking for 5 minutes. Some additional time may be needed depending on the size of the potato.
- Boil the green beans until tender and sauté garlic in olive oil. Add the green beans to the garlic and olive oil and cook for 1-2 minutes. Top with a sprinkle of salt.
- Serve and enjoy!
This meal requires a little more time but could also be easily made in the crockpot for those who are busy. If I were going to adjust this for the crockpot I would season the chicken, place in my crockpot, and cook on low for approximately 6 -8 hours. It will be very moist and possibly fall apart but it will be just as tasty! You will also have plenty of leftovers with this chicken and the meat can be used in other recipes! No waste!
