Turkey Bacon Breakfast Sandwich

This is a delicious and simple breakfast sandwich that I have found really quick to make in the morning. I find myself on the go constantly in the morning. Mainly because I LOVE to sleep. Don’t get me wrong, I’m a morning person all the way, but to sleep in an extra 15 minutes is an amazing experience some days. This almost always puts me in a bind for time and with needing to be specific and careful with the choices I make, this breakfast has become my new go to!

Turkey Bacon Breakfast Sandwich

1 Whole Wheat English Muffin 3 SP (this can be substituted with a lite english muffin to reduce points)

2 Slices Turkey Bacon 2 SP

1 Slice Thin Provolone Cheese 1 SP(this could be substituted with a fat free cheese)

1 Egg  with Salt and Pepper 2 SP

Total SP: 8 SP

  • Toast the english muffin in a toaster oven or toaster until golden brown
  • Cook two slices of turkey bacon in a pan (I use ceramic pans so that I don’t need additional oil). Once these are cooked I fold them in half and set them off to the side.
  • Fry one egg with a quick sprinkle of salt and pepper. I break the yolk so that I don’t have a messy sandwich.
  • Layer cheese, bacon, and egg on a napkin or plate while warm and enjoy!

This dish also goes great with a side of fruit. I tend to pair it up with a banana or strawberries. It is easy to eat on the run or to take with you to the office. It is also very inexpensive to make regularly. As I have mentioned above there are many ways to adjust this recipe to accommodate points. I currently have 44 points so I have more wiggle room than some.
