What a week it has been since I last posted. I left for my trip last Thursday and was away until Saturday afternoon. The trip was eye-opening and so incredibly motivating. Thursday I had the opportunity to learn more about the history of the area where we live and had a chance to collect water data to understand the health of the river we live on. I met some very interesting people who are passionate about their community and the history here. It was very humbling to meet people who have had such an impact on this area. On Friday we went to an organic farm and met the owner. We toured her property and we got to taste her freshly grown spinach. So good!! That afternoon we went on the hike I was so nervous about. What a crazy week this has been already. I am leaving tomorrow morning for a 2 1/2 day camping/hiking/educational experience with about 50 students. We will be rained on, cold, and possibly snowed on. It is going to be exhausting, exhilarating, and exciting. I am really looking forward to this trip!
While I am away I won’t be using a computer, phone, or any other technology. The goal is to learn about the river we live on, look at the impact the communities have on the water quality, and hear the stories of those who live there. We will be unplugged and engaged in nature. This is something that most teenagers don’t have an opportunity to do. I love my job! Continue reading
So it has been a rainy Saturday and I have been wanting to snack all day. It has been driving me crazy. I totally caved a couple of times and I’m regretting that now because I feel like crap. I decided to go through my “save for later” bookmarks on Facebook and saw this idea I saved to make baking soda artwork. My husband has been playing on his computer and writing all day so our time spent together has been pretty much non-existent today. I took control of the situation!
Baking soda art is simple and easy to do. I live on a river in the Chesapeake Bay so the water is brackish (salt and fresh water mixed). We have seahorses, oysters, dolphins, and crabs here so I wanted to make a couple of pieces that remind me of where I live. I chose a seahorse and sand dollar. Good evening everyone! I am so excited with our gardens progress. We have been putting so much work into it and it has sometimes been tiring. We have to carry them inside and outside every day since we don’t have a greenhouse. In the short time we have been gardening we have never seen so much success starting from seeds. I know that some of our plants are ready for their containers but we don’t have the rest of our supplies to transfer them over yet. When I started baking bread last year I absolutely fell in love with no knead bread. I am a big proponent for making everything we eat from scratch, as much as I can at least. The idea of whole food has a huge following and it makes sense. Eating food that isn’t processed and is an ingredient itself. Makes sense right? So why is it so hard to do? Cost and convenience is why my family had always turned to a grocery store loaf.
Bread has been around for thousands of years. Leavened bread was actually created by pure luck! Bread was originally composed of just flour, water, and salt. Pretty simple! When exposed to yeast the bread begins to bubble on the surface and when baked the bread rises and has the fluffy insides we have grown to love.
Bread takes time and requires kneading. While no knead bread can take 12-18 hours to make, it requires little effort on your part. Simply mix flour, water, yeast, and salt together and let the dough rise for 12-18 hours. Once the rise is complete you toss it into a dutch oven and bake. It forms a crunchy crust on the outside and a warm fluffy center on the inside!
